Auburn study targets food waste by refining ‘sell by’ dates

Researchers at Auburn University are using machine learning to map microbial changes in ground beef, aiming to replace conservative “sell by” dates with more accurate predictions based on actual food safety rather than mere color changes. Ultimately, the researchers hope to reduce the amount of meat that is likely perfectly good but is currently discarded by retailers and consumers due to misinterpreted labels.
